Spiralise that!

I wanted to buy a spiraliser for such a long time and finally I bought one!! I saw it at Robert dyas for £11.99 and just had to have it. It's small and compact which I liked, the spiralisers I've seen to date are a little bulky so I'm super happy with it. http://www.robertdyas.co.uk/jml-veggetti-spiralizer

My first attempt at spiralising went surprisingly well. I took 1 courgette and passed it through the machine. It's very easy to use (especially with courgette as it's fairly soft). 

I boiled the Courgetti for 20/30 seconds then drained the water away. This method creates a spagetti/noodle texture. 

I dressed my Courgetti with a tea spoon of mint, rock salt, pepper and then crumbled some feta cheese on it! It was extremely yummy! My husband said he could eat it all day long! And I would have to concur!! 

Tip, I left the Courgette in the drainer while I dressed it so any excess water could come away - avoids Courgetti getting soggy.

Healthy Greek yogurt dessert

Tonight's sweet craving was satisfied with this beauty. Super simple, super tasty, super healthy! 

Recipe: 
Greek yogurt mixed with a teaspoon of natural honey. Topped with yummy British strawberries and 1 cube of chocolate chopped into small crumbley bits sprinkled on top.

High protein. Guaranteed satisfaction. Chocolate mouse. Oh yea!

So tonight my chocolate craving made me experiment with protein powder and Cacao to create this yummy dessert! It was sooo simple and super quick to make! Here is the recipe:

1 scoop of casein protein powder
100ml milk (I used skimmed but you could easily use almond or soya milk)
2 tea spoons of Xylitol sweetener
1 heaped teaspoon of peanut butter (optional)

Put all ingredients (milk first) into a blender, blitz and its ready....its that simple!
You could put it in the fridge to cool for a while. I couldn't wait so just dug straight in :)

(FYI my husband said it taste like chocolatey baby food! He did go on to eat the whole pot in about 60 seconds!)

I found my not so guilty pleasure!

 This chocolate dessert is quite possibly the healthiest, tastiest thing on this planet! It is made from minimal ingredients and can be eaten on a high fat, low carb diet!


I actually started out trying to make dark chocolate which went wrong but resulted in this incredibleness!

Step 1 - Mix it all up
Warm 1/2 a cup of organic coconut oil up in the microwave or on a pan
Add 1/2 a cup of beautiful cacao powder
Add 1/4 cup xylitol sweetener
and whisk all ingrdients together

I added 4/5 cruched almonds too but this is optional

Step 2 - Egg whites
Separate 2 egg whites and whisk until light and fluffy
Add the egg whites to the chocolate mixture, transfer the whole thing to a blender and blend until it is not runny anymore but more like a moose.

Step 3 - Bake!
Empty the mixture out into a small baking tray
Bake for 12minutes if you like a gooey center, increase the time if you prefer the dessert to be firmer.

I cant explain how amazing these collective ingredients are for you!
Im over the moon with this recipe! As i am on the high fat diet i served this dessert up with some double cream poured over the top! it was delicious!

Best chocolate dessert ever!

Organic Coconut oil, cacao powder, xylitol sweetener and egg whites created the most incredible chocolatey goodness tonight! I had soooo much fun!

Yummy little egg muffins

So last night I was trying to make something that resembles a quiche but with no pastry!!
Introducing my yummy little egg muffins. I added peppers and mushrooms in a creamy pesto sauce but you could swap that for any veg/sauce you prefer.



This is how I made it:



Step 1 - Cook the filling
Cut some mushroom, peppers and onion into small cubes and set aside.
In a little pan crush 2 cloves of garlic into some organic coconut oil.
Add in onions and saute for a minute.
Add mushrooms and peppers.
Crack some sea salt and pepper over the mixture.
Add 1 tablespoon of philadelphia and a tea spoon of pesto

Cook for 3/4 mins on a slow heat and then set aside.

Step 2 - Prepare the egg
Crack 4 eggs into a bowl
Add 2 spoons double cream
whisk together
add salt and pepper to taste

Step 3 - Bring all the goodness together!
Get a muffin tray and add a large spoon full of the mushroom and pepper filling to 6/8 muffin cases
Evenly pour the egg mixture over each muffic case until it is just over half full
Sprinkle some grated parmesan and oregano over the top of each muffin

Bake in the oven for 20 mins or until muffins raise and are slightly brown on top
Let the muffins cool for a few minutes and then serve with some lovely salad.

I made extra and took them in for my lunch today too!
Please bare in mind that i am on a high fat, low carb, vegetarian diet at the moment which is why i am using parmesan and cream cheese but you could easily remove those ingrdients to make this a low calorie meal too.

Vegetarian Keto Heaven

So recently I started training at a gym called Educo. I go to the one on London Wall in the City. Its a great little studio with some lovely trainers who are all very inspiring, helpful and good at what they do! Here I learnt about the high fat, low carb, ketosis diet, which is what I am now doing for the next 2/3 weeks. To make things a little more interesting I am also vegetarian/pescetarian so it limits what I can and cant eat on the diet. I will be posting my fav recipes/creations on this diet in the next few weeks.

Kitchen Adventures!

Being in the kitchen is a very creative process for me. Making healthy food taste great is like a mini adventure everytime, one which bring me heaps of joy (when it turns out well atleast). Finding super healthy, unpronounceable substitutes for everyday ingredients is definitely one of my fav pass times!

So here we go...I will be sharing some of my recipes/kitchen adventure stories with you in the hope that you too can see how easy and fun it can be to make healthy food taste great! Also because I want to boast about how great my creations turned out! #JustSaying
